Outlook is a Microsoft program and Hotmail is an email service provided by Microsoft. Therefore, you would serve the subpoena on Microsoft's agent for service of process. You can look it up on California Secretary of State (Business Search) website.
This Outlook instance is connected to multiple external POP3 email servers, non of which I control or believe are Exchange Servers. I don't think there are any server side rules in use.
